Head Chef Tony, or 'Goongsy' as he is affectionately known to family & friends, brings an inimitable passion to the fresh ingredients that he receives with animated excitement. This passion is then transferred into the planning and execution of an array of truly inspired & flavour packed dishes that he genuinely lives for people to share & enjoy.
Tony first honed his exceptional skills many years ago at the iconic Flower Drum & not only did this carve the way for his gifted & intuitive style, it also enabled a relationship with the King of Seafood who supplies some of Melbourne's top restaurants. We are thrilled to bring this level of premium quality seafood to the mountain for Tony to work his magic with & most importantly, for our guests to share & enjoy.
Chef Goongsy creates with cultural influences & tastes from China, Vietnam, Japan and Thailand with a modern Asian Fusion style that is fresh, clean & explosive in flavour for a truly sensory journey...
Working closely with our exceptional Chef's & sharing in the passion & enthusiasm for creating an unforgettable experience, are our talented & colourful front of house team. With inspiration from the Asian flavours of the kitchen, the team test, trial & concoct some delectable cocktails for our guests to indulge & delight in.
Some previous hits have been the 'Kurutta Kokonattsu' which translates as 'Crazy coconut', served in a fresh coconut shell with a hit of chilli softened by Baileys, house made chocolate grenache & toasted coconut. Or for a fresh hit, the 'Naughty but Nice' with Asian spiced Bicardi, lime & cinnamon sugar rim. 'Kelly's Jelly Belly Donut Delight' was inspired by a cinnamon donut dessert special from the kitchen & was created lovingly with fresh strawberry couli, Baileys, house made shortcake sticks... & a splash of secret ingredients...

"We had dinner here on Saturday night & ordered the Gyoza, Pork Belly & Massaman Lamb Shoulder. All aspects of the meal were Amazing! The flavours were spot on for the different cuisines & the pork belly is a must order!!! We ate everything on our plates & were so full we couldn't fit in dessert (even if the dessert menu looks rediculously good...can't wait to try it next time!). Its hard to believe we have access to that quality food out here in the hills. Thanks for a lovely night out!"
